This past week I attempted to make my first "skinny" recipe - Skinny Salisbury Steak with Mushroom Gravy and Skinny Garlic Mashed Potatoes. I loved the mashed potatoes, which is hard to believe since they didn't have but a tablespoon of butter in them! Our small town grocery store didn't have lean turkey as the recipe calls for so I had to use two pounds of lean ground beef. I followed the recipe exaclty as it called for, but next time I make this I will probably cook the patties completely through instead of just browing the sides before adding to sauce. I browned the sides of the patties and then set them aside and they still needed some cooking time. I sauteed the mushrooms, added the patties back to the skillet, and added the sauce, but by the time my patties were fully cooked my mushrooms were starting to burn and my sauce was becoming less! It turned out to be very tasty and I will definitely make this again - but maybe with a little more sauce - the farmer loves lots of sauce, but then of course, the point value of this recipe may increase :)
If you need a good meal to add to your menu lineup this week, try this one!
